Ingredients

The pasta

  • 10 oz fettuccini pasta

The chicken

  • 1 lb skinless chicken breasts
  • cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian Seasoning
  • to taste salt and pepper
  • 1 ea egg
  • ¼ cup olive oil
  • cooking oil spray for air frying

The sauce

  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ¾ cup heavy whipping cream
  • ¼ cup dry white wine
  • 3 tbsp fresh lemon juice
  • 2 tsp lemon zest
  • ½ cup grated Parmesan cheese
  • to taste salt and pepper
  • 2-3 cups cooked broccoli florets
  • 2-3 cups fresh spinach

Instructions

  1. Cook the pasta according to package instructions.
  2. Combine breadcrumbs, Parmesan cheese, Italian Seasoning, salt, and pepper in a bowl.
  3. Beat the egg in a separate bowl.
  4. Dip chicken in the egg, then in the breadcrumb mixture.
  5. For pan-seared chicken, heat olive oil in a skillet and cook chicken until crisp and cooked through.
  6. For air-fried chicken, spray the air fryer basket, place chicken inside, and cook until crisp and cooked through.
  7. In a skillet, melt butter and sauté garlic until fragrant.
  8. Add heavy cream, white wine, lemon juice, lemon zest, and stir until combined.
  9. Lower heat, add Parmesan, salt, and pepper, and stir until cheese melts.
  10. Add broccoli and spinach, then combine with cooked pasta.
  11. Allow to cook together for a few minutes before serving.
