The main ingredients

  • 1-2 tbsp cooking fat of your choice
  • 1.5 lb boneless, skinless chicken breasts, cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 4 cups chicken broth
  • 3 cups dry penne pasta
  • 3 cups broccoli florets
  • ½ cup heavy cream
  • 1 tbsp corn starch

Optional garnish

  • to taste chopped fresh parsley
  • to taste grated Parmesan cheese

Instructions

  1. 1. Bring the chicken broth to a boil in a medium saucepan.
  2. 2. Heat the cooking fat in a large sauté pan over medium-high heat.
  3. 3. Add the chicken pieces, season with salt and pepper, and cook until golden brown, about 8-10 minutes.
  4. 4. Add the onion, garlic, carrots, celery, oregano, salt, and pepper; stir and cook for 1 minute.
  5. 5. Add the hot chicken broth and dry pasta, stir well, and bring to a boil.
  6. 6. Reduce heat to a simmer, cover, and cook for about 8 minutes, stirring occasionally, until the pasta is slightly undercooked.
  7. 7. Add the broccoli and stir gently.
  8. 8. Dilute the corn starch in the cream or milk, then stir it into the sauce.
  9. 9. Bring back to a simmer and cook for 1 minute to thicken.
  10. 10. Allow to rest uncovered for 5 minutes, garnish with parsley and Parmesan, and serve.
