One-Pot Creamy Chicken Pasta

Instructions
- 1. Bring the chicken broth to a boil in a medium saucepan.
- 2. Heat the cooking fat in a large sauté pan over medium-high heat.
- 3. Add the chicken pieces, season with salt and pepper, and cook until golden brown, about 8-10 minutes.
- 4. Add the onion, garlic, carrots, celery, oregano, salt, and pepper; stir and cook for 1 minute.
- 5. Add the hot chicken broth and dry pasta, stir well, and bring to a boil.
- 6. Reduce heat to a simmer, cover, and cook for about 8 minutes, stirring occasionally, until the pasta is slightly undercooked.
- 7. Add the broccoli and stir gently.
- 8. Dilute the corn starch in the cream or milk, then stir it into the sauce.
- 9. Bring back to a simmer and cook for 1 minute to thicken.
- 10. Allow to rest uncovered for 5 minutes, garnish with parsley and Parmesan, and serve.
