Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon olive oil
  • 1 lb raw boneless skinless chicken breast
  • 1 small onion
  • 2 cloves garlic
  • 3 cups low sodium chicken broth
  • 15 oz can tomato sauce
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • ¼ teaspoon table salt
  • ¼ teaspoon black pepper
  • 6 oz fresh spinach leaves
  • 12 oz dry wheat pasta
  • 2 oz 1/3 less fat cream cheese
  • 1 oz grated parmesan cheese

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium-high heat and cook the chicken until browned and cooked through.
  2. Remove the chicken and keep it warm.
  3. Add another teaspoon of olive oil to the pot and sauté the chopped onion until softened.
  4. Add minced garlic and cook for another minute.
  5. Stir in the chicken broth, tomato sauce, tomato paste, Italian seasoning, salt, and pepper, scraping any browned bits from the bottom.
  6. Add the spinach and let it wilt.
  7. Stir in the pasta and bring to a boil, then reduce heat and simmer for 12-15 minutes until the pasta is cooked.
  8. Remove from heat and stir in the cream cheese and parmesan until melted.
  9. Return the chicken to the pot and mix everything together.
