Ingredients

The pasta

  • 10 oz dry wheat spaghetti
  • 3 cups low sodium chicken broth
  • 1 cup skim milk
  • 3 tablespoons lemon juice
  • 2 ½ cups fresh broccoli florets

The chicken

  • 1 lb raw boneless skinless chicken breast
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 1 ½ teaspoons olive oil

The seasoning

  • 3 tablespoons all purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons drained, rinsed capers
  • 1 teaspoon lemon zest
  • 1-2 tablespoons chopped fresh parsley

Instructions

  1. Mix 1 tablespoon of flour with salt and pepper, then coat the chicken in this mixture.
  2. Heat 1 tablespoon of oil in a pot and cook the chicken until browned, then set aside.
  3. Lower the heat and add remaining oil and butter, then sauté garlic for 30 seconds.
  4. Whisk in the remaining flour, then add milk, broth, and lemon juice, stirring to combine.
  5. Add spaghetti to the pot, cover with liquid, and bring to a boil before reducing to a simmer for 10 minutes.
  6. Stir in capers, lemon zest, parsley, and the cooked chicken.
  7. Place broccoli on top, cover, and steam for 2 minutes before mixing everything together.
