Asparagus and Cheese Tart

asparagus, tough ends trimmed

gruyere cheese, shredded or crumbled (vegan cheese works fine as well)

fresh thyme

a sprinkling
flaky sea salt

honey or maple syrup
Instructions
- Preheat the oven to 400°F and line a baking sheet with lightly greased parchment paper.
- Roll out the puff pastry into a rectangle the size of the baking sheet and transfer it onto the lined sheet.
- Score the edges of the pastry and poke holes throughout with a fork.
- Add the garlic confit and fresh thyme to the pastry, crushing some garlic pieces and leaving others whole.
- Arrange the asparagus creatively on top of the pastry within the scored border.
- Sprinkle the cheese over the asparagus and bake for 25-30 minutes until the crust is golden and puffed.
- Serve immediately, cut into triangles or squares, and optionally drizzle with honey.
