Ingredients

The filling

  • 8 spears thick asparagus
  • 1 clove garlic
  • 2 teaspoons olive oil
  • ¼ teaspoon kosher salt
  • to taste freshly ground black pepper
  • 1 medium yellow onion
  • pinch granulated sugar

The tartlets

  • 30 shells mini phyllo pastry shells
  • cup shredded part-skim mozzarella cheese
  • 3 tablespoons shredded parmesan cheese
  • to taste chopped fresh chives (optional)

Instructions

  1. Preheat the oven to 350°F and line a large sheet pan with foil.
  2. Cut asparagus in half lengthwise and then into 1-inch pieces, mixing with garlic, 1 teaspoon olive oil, 1/8 teaspoon salt, and pepper in a bowl.
  3. Sauté the asparagus in a non-stick skillet until slightly softened and browned, then set aside.
  4. In the same skillet, add another teaspoon of oil and the sliced onions, cooking with water, salt, and sugar until caramelized.
  5. Assemble the tartlets by layering mozzarella cheese, onions, asparagus, and more cheese in each shell.
  6. Bake for 10 minutes until the shells are crisp and the cheese is melted, garnish with chives, and serve immediately.
