Ingredients

The prawns

  • 10 oz shell-on big prawns

The sauce

  • 2 tablespoons tamarind pulps
  • ¼ cup water
  • ½ teaspoon salt
  • 3 tablespoons cooking oil
  • ½ tablespoon sugar

Instructions

  1. Rinse the prawns and pat them dry, then trim the antennae and devein them.
  2. Mix tamarind pulp with water and extract the juice.
  3. Combine the tamarind juice, pulp, and salt with the prawns and marinate for 10 minutes.
  4. Heat oil in a wok and pan-fry the prawns until cooked and slightly charred, then add sugar and stir to combine.
  5. Serve immediately with steamed rice.
