Pan Fried Fresh Water Prawn

Ingredients

The prawns

  • 6 fresh water prawn

The sauce and seasoning

  • tablespoons cooking oil
  • 2 cloves garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • ½ teaspoon sugar

The garnish

  • 1 tablespoon chopped scallions

Instructions

  1. Make a shallow incision along the back of each prawn, remove the dark vein, rinse, and pat dry.
  2. Heat oil in a wok or pan, then add garlic and stir-fry until aromatic and lightly browned.
  3. Add the prawns, soy sauce, Shaoxing wine, and sugar; stir well to combine.
  4. Press down on each prawn with a wok turner, pan-frying until fully cooked.
  5. Add chopped scallions and stir to combine; serve hot.
