Instructions
- Make a shallow incision along the back of each prawn, remove the dark vein, rinse, and pat dry.
- Heat oil in a wok or pan, then add garlic and stir-fry until aromatic and lightly browned.
- Add the prawns, soy sauce, Shaoxing wine, and sugar; stir well to combine.
- Press down on each prawn with a wok turner, pan-frying until fully cooked.
- Add chopped scallions and stir to combine; serve hot.
