Black Pepper Shrimp

Ingredients

The shrimp

  • 12 oz tiger prawn or shrimp, shell-on, headless

The sauce

  • 1 teaspoon black peppercorn
  • 3 tablespoons butter, melted
  • 2 cloves garlic, minced
  • ½ tablespoon oyster sauce
  • 1 tablespoon Chinese rice wine
  • 1 teaspoon sugar
  • 1 pinch salt
  • 1 tablespoon scallion, chopped

Instructions

  1. Remove the shells from the shrimp, leaving the tails intact.
  2. Lightly pound the black peppercorns until coarsely cracked.
  3. Heat a skillet or wok and add the melted butter over medium heat.
  4. Sauté the garlic and black pepper until fragrant.
  5. Add the shrimp and stir to combine.
  6. Add the oyster sauce and stir a few times before incorporating the rice wine and sugar.
  7. Stir-fry until the shrimp are cooked through.
  8. Add the scallions, mix well, then serve immediately.
