Salt and Pepper Shrimp

Ingredients

The shrimp

  • 10 oz shrimp, head-on, shell-on
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper
  • oil for deep-frying

The frying batter

  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ teaspoon baking powder or baking soda
  • 1 large egg white
  • ½ cup water
  • 1 tablespoon cooking oil
  • 1 pinch salt

The stir-fry

  • ½ tablespoon oil
  • 1 tablespoon green onion, chopped
  • some red chili or green jalapeno, sliced
  • ½ teaspoon salt
  • ½ teaspoon white pepper

Instructions

  1. Rinse the shrimp and pat dry, then marinate with salt and white pepper for 15 minutes.
  2. Mix the frying batter ingredients until well combined, then coat the shrimp in the batter.
  3. Heat oil in a wok to 350°F (175°C) and deep-fry the shrimp until light golden brown and crispy.
  4. Remove the shrimp and drain excess oil.
  5. In a skillet, heat oil and stir-fry green onion and chili for a few seconds, then add the fried shrimp and season with salt and white pepper.
  6. Stir well and serve immediately.
