Ingredients

The shrimp and coating

  • 2 pounds jumbo shrimp, deveined and peeled but leave tails on
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • 3 large eggs, beaten
  • cups panko breadcrumbs
  • as needed cups oil for frying

Optional garnishes

  • as needed lemon wedges
  • as needed parsley
  • as needed cocktail sauce

Instructions

  1. Combine flour, salt, pepper, and garlic powder in a bowl.
  2. Beat the eggs in a separate bowl.
  3. Place the breadcrumbs in a third bowl.
  4. Dip each shrimp in the flour, then in the egg, and finally coat with breadcrumbs.
  5. Heat oil in a deep pot to 350°F.
  6. Fry 6 shrimp at a time for 3-4 minutes until golden brown.
  7. Drain the cooked shrimp on paper towels.
  8. Serve immediately with cocktail sauce and garnish with lemon and parsley if desired.
