Ingredients

The shrimp

  • pound large shrimp, peeled and deveined

The coating

  • ¼ cup cornmeal
  • ¾ cup flour
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ½-1 teaspoon cayenne pepper
  • ¾-1 teaspoon salt
  • 1 teaspoon white or black pepper

The wet mixture

  • ¾ cup buttermilk
  • 1 large egg

For frying

  • as needed cup vegetable oil

Instructions

  1. Preheat a deep-fryer to 375°F or fill a large saucepan halfway with vegetable oil.
  2. In a large bowl, mix together cornmeal, flour, garlic powder, onion powder, cayenne pepper, salt, and black or white pepper.
  3. In another bowl, mix buttermilk and egg, then set aside.
  4. Dip the shrimp in the buttermilk mixture, then coat them in the flour mixture.
  5. Fry the shrimp in batches until slightly brown and crispy, about 3 to 4 minutes, or longer for larger shrimp.
  6. Remove the shrimp with a slotted spoon and place them on a cookie rack to ensure crispness.
  7. Repeat with the remaining shrimp.
