Ingredients

The shrimp

  • lbs extra large shrimp, peeled and deveined

The breading

  • ½ cup all-purpose flour (preferably unbleached)
  • tsp paprika
  • ½ tsp garlic powder
  • to taste salt and freshly ground black pepper
  • 2 large eggs
  • 2 cups panko bread crumbs

The oil and garnish

  • about 8 cups vegetable oil
  • 1 Tbsp minced fresh parsley (optional)
  • 1 lemon cut into wedges (optional)

Instructions

  1. Whisk together the flour, paprika, garlic powder, salt, and pepper in a shallow dish.
  2. In a second dish, whisk the eggs until well blended.
  3. Pour the panko into a third shallow dish.
  4. Preheat the vegetable oil in a large pot to 350°F.
  5. Dredge the shrimp in the flour mixture, then dip in the egg mixture, and finally coat in panko, pressing to adhere.
  6. Fry the shrimp in batches for about 1 to 2 minutes until cooked through, maintaining the oil temperature.
  7. Remove the shrimp and drain on paper towels. Repeat with remaining shrimp.
  8. Serve garnished with parsley, lemon wedges, and your favorite dipping sauce.
