Ingredients

The shrimp

  • 6 pieces shrimp or tiger prawn, shelled, deveined and tail on

The batter

  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 1 tablespoon bonito flakes
  • 1 piece egg
  • ¾ cup milk
  • 2 cups Panko (Japanese breadcrumbs)
  • as needed unit vegetable oil for deep frying

The tartar dipping sauce

  • 1 piece hard-boiled egg
  • ¼ piece yellow onion, finely chopped
  • 2 tablespoons Japanese mayonnaise (Kewpie)
  • to taste unit salt
  • to taste unit ground black pepper

Instructions

  1. Clean the shrimp by peeling, deveining, and rinsing them, leaving the tails on.
  2. Make shallow vertical slits on the underside of each shrimp to prevent curling during frying.
  3. Pat the shrimp dry with paper towels and set aside.
  4. In a bowl, combine all-purpose flour, salt, bonito flakes, egg, and milk; whisk until well combined.
  5. Pour Panko breadcrumbs onto a shallow plate.
  6. Coat each shrimp with the batter, then roll it in the Panko breadcrumbs, pressing lightly to ensure an even coating.
  7. Heat vegetable oil in a deep pot to 340°F to 360°F (170°C to 182°C).
  8. Deep-fry the shrimp until golden brown and crispy on both sides, then drain on paper towels.
  9. Prepare the dipping sauce by mixing chopped hard-boiled egg, onion, and Japanese mayonnaise; season with salt and pepper to taste.
  10. Serve the fried shrimp hot with the cold dipping sauce.
