Mustard Mayo Shrimp

Ingredients

The shrimp

  • ½ lb shrimp or tiger prawn, shelled and deveined
  • 1 large egg yolk
  • ½ teaspoon salt
  • ¼ teaspoon ground white pepper
  • 1 tablespoon Chinese Shaoxing wine or Japanese cooking sake
  • 2 tablespoons corn starch
  • 2 cups vegetable oil, for frying

The mustard mayonnaise sauce

  • 5 tablespoons Japanese mayonnaise
  • 1 tablespoon Dijon mustard
  • 3 drops lemon juice

Instructions

  1. Rinse, devein, and pat the shrimp dry, then marinate with egg yolk, salt, ground white pepper, Shaoxing wine, and corn starch for 10 minutes.
  2. In a small bowl, mix Japanese mayonnaise, Dijon mustard, and lemon juice to prepare the sauce.
  3. Heat oil in a saucepan over medium-high heat and deep-fry the shrimp in batches for about 2 minutes until golden brown.
  4. Transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
  5. Toss the shrimp with the mustard mayonnaise sauce and serve immediately.
