Instructions
- Rinse, devein, and pat the shrimp dry, then marinate with egg yolk, salt, ground white pepper, Shaoxing wine, and corn starch for 10 minutes.
- In a small bowl, mix Japanese mayonnaise, Dijon mustard, and lemon juice to prepare the sauce.
- Heat oil in a saucepan over medium-high heat and deep-fry the shrimp in batches for about 2 minutes until golden brown.
- Transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
- Toss the shrimp with the mustard mayonnaise sauce and serve immediately.
