Dynamite Shrimp

Ingredients

The shrimp

  • 6 oz medium-sized shrimp, shelled and deveined
  • oil for deep-frying

The batter

  • ¼ cup all-purpose flour, sifted
  • ¼ cup cornstarch
  • ½ teaspoon baking powder
  • 1 large egg white
  • 50 ml water
  • 1 tablespoon oil
  • 1 pinch salt

The sauce

  • 3 tablespoons mayonnaise, Kewpie brand preferred
  • 1 teaspoon honey
  • ¼ teaspoon Sriracha, or to taste
  • 1 squirt lemon juice

Instructions

  1. Clean the shrimp by rinsing them under cold water, then pat them dry.
  2. Prepare the batter by combining the ingredients in one bowl and mixing the sauce ingredients in another bowl.
  3. Coat the shrimp in the batter, then heat oil for deep-frying.
  4. Deep fry the shrimp until golden brown, then transfer them to a paper towel-lined bowl.
  5. Toss the fried shrimp in the sauce until well coated and serve immediately.
