Orange Garlic Shrimp

Ingredients

The sauce

  • ½ cup fresh orange juice
  • tsp orange zest
  • cup unsalted or low-sodium chicken broth
  • 2 Tbsp soy sauce
  • 3 Tbsp honey
  • 2 tsp lemon juice or rice wine vinegar
  • tsp red pepper flakes (optional)
  • 2 tsp cornstarch

The shrimp and vegetables

  • 1 lb large shrimp, peeled and deveined
  • to taste salt and pepper
  • ½ tsp sesame oil
  • 1 Tbsp vegetable oil
  • ¾ cup chopped bell peppers, cut into ½-inch pieces
  • cups sugar snap peas
  • 4 cloves garlic, minced
  • 2 tsp peeled and minced fresh ginger
  • 2 Tbsp sliced green onions
  • ½ tsp sesame seeds
  • ¼ cup cilantro leaves

Instructions

  1. Whisk together the sauce ingredients in a bowl and set aside.
  2. Pat the shrimp dry and toss with salt, pepper, and sesame oil.
  3. Heat oil in a wok or skillet over high heat until smoking, then add shrimp and cook until pink.
  4. Transfer shrimp to a plate and add bell peppers and sugar snap peas to the skillet, cooking without stirring for 1 minute.
  5. Stir the vegetables and cook until lightly browned, then add garlic and ginger, sautéing for another 30 seconds.
  6. Pour the sauce into the skillet, stirring continuously until it thickens.
  7. Return the shrimp to the pan, toss to combine, and heat through.
  8. Garnish with green onions, sesame seeds, and cilantro before serving.
