Ingredients

The batter

  • ½ cup pistachio butter
  • ¼ cup butter
  • 1 cup white sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ½ cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk

The mix-ins

  • ½ cup unsalted pistachios
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tray.
  2. In a large bowl, cream together the pistachio butter, butter, and sugar.
  3. Add the eggs and vanilla, mixing until light and fluffy.
  4. Incorporate the flour, baking powder, and salt, stirring until mostly combined.
  5. Add the milk and stir until smooth.
  6. Fold in the chocolate chips and pistachios until evenly distributed.
  7. Fill the muffin tray cavities with the batter.
  8. Bake in the preheated oven for 18–20 minutes, or until a toothpick comes out clean.
