Chocolate Pistachio Cookies

Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ¾ cup Dutch processed cocoa
  • 1 cup unsalted butter (at room temperature)
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chunks
  • 1 cup chopped pistachios
  • to taste sea salt (for sprinkling)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with a Silpat or parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, sea salt, and cocoa powder, then set aside.
  3. Cream the butter and sugars together with a mixer until smooth, then add the eggs one at a time and mix in the vanilla.
  4. Gradually add the flour mixture and beat until just combined, then stir in the chocolate chunks and pistachios.
  5. Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart, and sprinkle with sea salt.
  6. Bake for 9-10 minutes until set but still soft in the center, then let them sit on the baking sheet for 3 minutes before transferring to a wire rack to cool completely.
