Salted Pistachio Chocolate Chunk Slice and Bake Cookies

all-purpose flour (spooned & leveled)

chocolate, coarsely chopped

finely chopped pistachios, divided

coarse sugar for rolling

coarse sea salt or flaky sea salt, for sprinkling on top
Instructions
- Beat the butter and brown sugar together until creamy, then mix in the egg and vanilla.
- Gradually add the flour and salt, then mix in most of the chocolate and pistachios.
- Divide the dough into two logs, roll in coarse sugar and pistachios, then chill for at least 3 hours.
- Preheat the oven and prepare baking sheets.
- Slice the chilled logs into cookies and place them on baking sheets.
- Sprinkle with sea salt and bake until golden around the edges.
- Cool on the baking sheets before transferring to a wire rack.
