Salted Pistachio Chocolate Chunk Slice and Bake Cookies

Ingredients

  • ¾ cup unsalted butter, softened to room temperature
  • cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • teaspoons pure vanilla extract
  • 2 cups all-purpose flour (spooned & leveled)
  • ½ teaspoon salt
  • 6 ounces chocolate, coarsely chopped
  • ¾ cup finely chopped pistachios, divided
  • to taste coarse sugar for rolling
  • to taste coarse sea salt or flaky sea salt, for sprinkling on top

Instructions

  1. Beat the butter and brown sugar together until creamy, then mix in the egg and vanilla.
  2. Gradually add the flour and salt, then mix in most of the chocolate and pistachios.
  3. Divide the dough into two logs, roll in coarse sugar and pistachios, then chill for at least 3 hours.
  4. Preheat the oven and prepare baking sheets.
  5. Slice the chilled logs into cookies and place them on baking sheets.
  6. Sprinkle with sea salt and bake until golden around the edges.
  7. Cool on the baking sheets before transferring to a wire rack.
