Instructions
- Mix the seasoning ingredients in a bag and set aside.
- Turn on the Sauté setting of the Instant Pot and add olive oil.
- Coat the beef cubes with the seasoning and brown them in batches.
- Remove the browned beef and add butter and onion to the pot, scraping up browned bits.
- Add garlic and cook briefly, then pour in red wine and add the remaining gravy ingredients.
- Cancel the Sauté setting and return the beef to the pot.
- Seal the lid and cook on high pressure for 25 minutes.
- Allow a 10-minute natural release before venting the remaining pressure.
- Taste the gravy and adjust seasoning as needed before serving.
