Crockpot Beef Tips with Gravy

Instructions
- Combine the beef tips, frozen pearl onions, tomato paste, garlic powder, onion powder, dried thyme, salt, and pepper in a slow cooker.
- Stir until the beef and onions are coated in the tomato paste and seasonings, then add the mushrooms and pour the beef broth over everything.
- Cover and cook on high for 4 hours or on low for 6 to 8 hours.
- Once the beef is tender, make a cornstarch slurry by mixing 2 tablespoons of cornstarch with ¼ cup of hot liquid from the slow cooker until dissolved.
- Pour the slurry into the slow cooker, stir, and set to high for another 30 minutes to thicken the gravy.
- Serve over mashed potatoes or noodles and garnish with parsley if desired.
