Ingredients

The beef and vegetables

  • 2 lbs. beef tips (cubed sirloin or beef stew meat)
  • 1 12-ounce bag frozen pearl onions
  • 8 ounces sliced mushrooms

The sauce

  • ¼ cup tomato paste
  • cups low-sodium beef broth
  • 2 to 4 tablespoons cornstarch

The seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon coarse sea salt
  • ½ teaspoon black pepper

For serving

  • to taste cooked mashed potatoes, mashed parsnips, or noodles
  • to taste snipped fresh parsley (optional)

Instructions

  1. Combine the beef tips, frozen pearl onions, tomato paste, garlic powder, onion powder, dried thyme, salt, and pepper in a slow cooker.
  2. Stir until the beef and onions are coated in the tomato paste and seasonings, then add the mushrooms and pour the beef broth over everything.
  3. Cover and cook on high for 4 hours or on low for 6 to 8 hours.
  4. Once the beef is tender, make a cornstarch slurry by mixing 2 tablespoons of cornstarch with ¼ cup of hot liquid from the slow cooker until dissolved.
  5. Pour the slurry into the slow cooker, stir, and set to high for another 30 minutes to thicken the gravy.
  6. Serve over mashed potatoes or noodles and garnish with parsley if desired.
