Slow Cooker Smothered Beef Tips

Instructions
- 1. Season the beef pieces with salt and pepper, then brown them in hot oil in a skillet.
- 2. Transfer the browned beef to the slow cooker.
- 3. In the same skillet, cook the onions until translucent, then add garlic and cook for another minute.
- 4. Pour in the beef broth and Worcestershire sauce, bringing it to a simmer, then add to the slow cooker with bay leaves and thyme.
- 5. Cover and cook on low for 8-9 hours or high for 4-5 hours until the beef is tender.
- 6. For the gravy, melt butter in a saucepan, whisk in flour, and cook until bubbling.
- 7. Gradually add the reserved cooking liquid from the slow cooker, whisking until thickened.
- 8. Stir in red wine vinegar, season to taste, and serve the beef with gravy over mashed potatoes.
