Ingredients

The beef

  • 3 pounds tri tip or sirloin beef roast, cut into 1- to 2-inch pieces
  • to taste Salt and pepper
  • 2-3 tablespoons olive oil, avocado oil or canola/vegetable oil
  • 1 cup diced onions
  • 2-3 cloves garlic, finely minced
  • 3 cups beef broth or beef stock
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • a pinch dried thyme

The gravy

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 teaspoon red wine vinegar
  • to taste Fresh parsley, for serving (optional)

Instructions

  1. 1. Season the beef pieces with salt and pepper, then brown them in hot oil in a skillet.
  2. 2. Transfer the browned beef to the slow cooker.
  3. 3. In the same skillet, cook the onions until translucent, then add garlic and cook for another minute.
  4. 4. Pour in the beef broth and Worcestershire sauce, bringing it to a simmer, then add to the slow cooker with bay leaves and thyme.
  5. 5. Cover and cook on low for 8-9 hours or high for 4-5 hours until the beef is tender.
  6. 6. For the gravy, melt butter in a saucepan, whisk in flour, and cook until bubbling.
  7. 7. Gradually add the reserved cooking liquid from the slow cooker, whisking until thickened.
  8. 8. Stir in red wine vinegar, season to taste, and serve the beef with gravy over mashed potatoes.
