Ingredients

The roast

  • 2-4 pounds chuck roast
  • 1 teaspoon brown sweetener or sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika

  • 1 teaspoon olive oil
  • ½ cup diced or sliced onions
  • 2-3 cloves garlic
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 pound baby potatoes
  • 1 pound carrots

Optional Gravy

  • 3 tablespoons butter
  • ¼ cup flour
  • 1-2 cups beef broth
  • ½ cup cooked beef drippings

Instructions

  1. Season all sides of the roast with spices.
  2. Sear the roast in a skillet with olive oil until golden brown.
  3. Add onions, garlic, broth, and Worcestershire sauce to the slow cooker.
  4. Place the seasoned roast in the slow cooker.
  5. Top with carrots and potatoes, ensuring they are on top of the roast.
  6. Cover and cook on Low for 8-10 hours or on High for 5-7 hours, depending on the size of the roast.
  7. Once cooked, let the meat rest before serving.
  8. For gravy, melt butter in a skillet, add flour to create a roux, then add broth and drippings to thicken.
  9. Season gravy with salt and pepper to taste.
