Instructions
- Season all sides of the roast with spices.
- Sear the roast in a skillet with olive oil until golden brown.
- Add onions, garlic, broth, and Worcestershire sauce to the slow cooker.
- Place the seasoned roast in the slow cooker.
- Top with carrots and potatoes, ensuring they are on top of the roast.
- Cover and cook on Low for 8-10 hours or on High for 5-7 hours, depending on the size of the roast.
- Once cooked, let the meat rest before serving.
- For gravy, melt butter in a skillet, add flour to create a roux, then add broth and drippings to thicken.
- Season gravy with salt and pepper to taste.
