Slow Cooker Beef Pot Roast with Vegetables

Ingredients

The roast and broth

  • 2 lbs beef roast
  • 1 cup bone broth

The vegetables

  • 2 medium sweet potatoes, cut into cubes
  • 2 medium parsnips, cut into cubes
  • 1 lb brussels sprouts, ends removed
  • 1 medium onion, chopped into medium chunks

The seasoning

  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp sea salt
  • 1 tbsp ground pepper

Instructions

  1. Mix all the seasonings in a bowl to create a spice rub.
  2. Reserve half of the spice rub for the vegetables and massage the remaining half onto the beef.
  3. Place the beef in the crockpot and pour the bone broth around it.
  4. Add the vegetables and sprinkle the reserved seasoning over them.
  5. Cook on low for 8 hours.
  6. Remove the beef from the crockpot and shred it with forks or tongs.
  7. Serve the shredded beef with the vegetables.
