Ingredients

The beef

  • 1½ – 2 pounds beef tips/stew meat

The seasoning

  • ½ tablespoon Creole Seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • to taste salt
  • to taste pepper

The vegetables

  • ½ cup diced onions
  • 2-3 cloves garlic, minced

The gravy

  • 2 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • ½ tablespoon Worcestershire sauce
  • 1½-2 cups broth (beef, chicken, or vegetable)

The oil

  • 1 teaspoon olive oil

Instructions

  1. Heat olive oil in a Dutch oven or soup pot over medium-high heat.
  2. Add the sliced beef and season with spices, then sear both sides.
  3. Remove the seared beef from the pot and set aside.
  4. Reduce heat to medium and add onions and garlic, cooking until translucent.
  5. Add butter to the pot and let it melt.
  6. Stir in flour gradually to create a roux, avoiding clumps.
  7. Pour in broth and Worcestershire sauce, stirring until gravy thickens.
  8. Return the seared beef to the pot, cover, and simmer on low for 1-2 hours until tender.
