Instructions
- Season the beef tips with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large pan and sear the beef on all sides, then set aside.
- Melt butter in the same pan, then add onions and bell peppers, cooking until tender.
- Add broth and coconut aminos to the pan, then return the beef to the pan and bring to a boil.
- Reduce heat to low, cover, and simmer for 1 to 2 hours until the beef is tender.
- Cook the brown rice according to package instructions.
- Make a slurry with some pan liquid and tapioca flour, then stir it back into the pot to thicken the gravy.
- Serve the beef tips over the cooked brown rice, topped with peppers, onions, and gravy.
