Ingredients

The beef

  • 2 pounds beef tips (sliced into 1 inch cubes)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp black pepper

The cooking fats

  • 2 tbsp olive oil
  • 3 tbsp unsalted butter

The vegetables

  • 1 each green pepper (sliced)
  • 1 each red pepper (sliced)
  • 1 each onion (diced)

The sauce

  • 3 cups beef broth
  • 2 tbsp coconut aminos
  • 2 tbsp tapioca flour

The rice

  • 2 cups brown rice

Instructions

  1. Season the beef tips with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil in a large pan and sear the beef on all sides, then set aside.
  3. Melt butter in the same pan, then add onions and bell peppers, cooking until tender.
  4. Add broth and coconut aminos to the pan, then return the beef to the pan and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1 to 2 hours until the beef is tender.
  6. Cook the brown rice according to package instructions.
  7. Make a slurry with some pan liquid and tapioca flour, then stir it back into the pot to thicken the gravy.
  8. Serve the beef tips over the cooked brown rice, topped with peppers, onions, and gravy.
