Beef Tips with Mushroom Gravy

Ingredients

The beef and seasoning

  • 1 1/4 pounds sirloin steak cut into 1 inch pieces
  • to taste salt
  • to taste pepper

The sauce

  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 8 ounces sliced mushrooms
  • 1/2 cup onion, chopped
  • 1 teaspoon garlic, minced
  • 3 tablespoons flour
  • 1 1/2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1 tablespoon chopped parsley

Instructions

  1. Heat olive oil in a large pan over high heat and season the steak with salt and pepper.
  2. Cook the steak in a single layer for 3-4 minutes per side until browned, then remove and keep warm.
  3. Melt butter in the same pan, add mushrooms and onions, and season with salt and pepper. Cook until tender and browned.
  4. Add garlic and cook for an additional 30 seconds.
  5. Stir in flour and cook for 1 minute while stirring constantly.
  6. Slowly whisk in beef broth, bring to a simmer, and cook until thickened.
  7. Stir in Worcestershire sauce and soy sauce.
  8. Return the steak to the pan and toss to coat with the sauce, cooking until warmed through.
  9. Garnish with parsley and serve.
