Ingredients

The beef

  • 1 tablespoon soy sauce
  • 1 tablespoon granulated sugar
  • 1 ½ pounds sirloin steak tips
  • to taste salt
  • to taste freshly ground black pepper

The mushrooms

  • ¼ ounce dried porcini mushrooms
  • ¼ cup beef broth

The gravy

  • 2 tablespoons olive oil
  • 1 pound white mushrooms
  • 1 large onion
  • ½ teaspoon salt
  • 2 cloves garlic
  • ½ teaspoon thyme leaves
  • 4 teaspoons all-purpose flour
  • 1 ½ cups beef broth
  • 1 tablespoon parsley leaves
  • to taste salt
  • to taste freshly ground black pepper
  • optional buttered egg noodles for serving

Instructions

  1. Marinate the beef in a mixture of soy sauce and sugar for 30 minutes to 1 hour, then drain and pat dry.
  2. Rehydrate the dried porcini mushrooms in beef broth using a microwave, then mince them and reserve the broth.
  3. In a skillet, heat olive oil and brown the beef in batches, then set aside.
  4. In the same skillet, add more oil and sauté the fresh mushrooms until browned, then add the onion and cook until it starts to brown.
  5. Stir in garlic, thyme, and flour until coated, then add the reserved mushroom liquid and beef broth, scraping the pan.
  6. Return the beef to the skillet, simmer until cooked through, and season to taste.
  7. Serve with buttered noodles if desired.
