Ingredients

The Beef

  • 2 pounds stew meat, cubed
  • 1 teaspoon salt
  • 1 teaspoon black pepper

The Gravy

  • 3 tablespoons all-purpose flour
  • 1 tablespoon brown sugar
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • ¼ teaspoon paprika
  • ½ teaspoon red pepper flakes (optional)
  • 2 leaves bay leaves
  • 2 sprigs fresh thyme
  • 3 tablespoons cornstarch
  • ¼ cup water

Instructions

  1. Season the meat with salt, pepper, flour, and sugar.
  2. Heat the oil in a Dutch oven over medium-high heat, then add the beef and brown it on all sides.
  3. Set the browned meat aside. Add butter to the pot, followed by onion, and cook until translucent, then add the garlic and cook briefly.
  4. Pour in the beef stock, Worcestershire sauce, and soy sauce, bringing it to a boil.
  5. Reduce the heat, add the spices and meat, and cover the pot, cooking for two hours until the meat is tender.
  6. Combine the cornstarch and water to form a paste, add it to the pot, and cook until the mixture thickens.
  7. Discard the bay leaf and thyme, then serve.
