Ingredients

  • 1 medium onion
  • 2 medium carrots
  • 1 cup rice
  • 4 cups homemade chicken stock
  • to taste flat leaf parsley
  • to taste freshly cracked pepper

Instructions

  2. Add the chopped onion, sliced carrots, and rice to the boiling stock.
  3. Simmer until the vegetables and rice are tender.
  4. Serve hot, garnished with parsley and cracked pepper.
