Chicken and Rice Soup

The rice
Instructions
- Melt the butter in a large pot over medium heat.
- Add the onion, carrots, and celery, cooking until softened.
- Stir in the garlic and cook briefly.
- Add the chicken, Italian seasoning, salt, pepper, and chicken broth, then bring to a simmer.
- Cook until the vegetables are tender.
- Stir in the rice and cook for a few more minutes.
- Sprinkle with parsley and serve.
