Ingredients

The meat

  • 3 pounds Pork Shoulder / Pork Butt, Cut in 2" chunks

Seasoning

  • 2 teaspoons Salt (to season pork)
  • 2 teaspoons Pepper (to season pork)
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Mexican Oregano (or regular is fine)
  • 1 tablespoon Paprika
  • 1 tablespoon Adobo Powder (such as Goya)
  • 1 teaspoon Kosher Salt (or ½ tsp table salt)
  • 2 tablespoons Chili Powder (New Mexico Red, or just regular red)

The base

  • 3 tablespoons Peanut Oil (or canola, sunflower)
  • 2 Onions chopped
  • 1 large Bay Leaf (or 2 smaller ones)
  • 1 stick Cinnamon Stick, optional
  • 6 cloves Garlic, pressed or minced
  • 3 Poblano Chile Peppers cut in large dice

The liquids

  • 1 12-ounce Bottle of Beer (Mexican dark beer, or a lager)
  • 1 can Chipotle in Adobo*
  • 2 tablespoons adobo sauce from the can
  • 5 cups Chicken Broth, low sodium

The finishing touch

  • 1 25 oz can Hominy, drained & rinsed

Instructions

  1. Prepare all ingredients by cutting up the pork, chopping onions and chile peppers, and mincing garlic.
  2. Season the pork chunks with salt and pepper, then set aside.
  3. Use the Sauté function on the Instant Pot to heat peanut oil, then brown the pork in two batches, removing it to a bowl after browning.
  4. In the pot, add onions, bay leaf, and cinnamon stick, cooking until onions are translucent.
  5. Add garlic and all spices, stirring well.
  6. Add poblano peppers, beer, chipotle in adobo, hominy, pork chunks, and broth, stirring to combine.
  7. Lock the lid in place, set the steam release knob to Sealing, and cook on Manual (Pressure Cook) for 30 minutes.
  8. After cooking, let the pot naturally release pressure for 25 minutes before manually releasing any remaining pressure.
  9. Open the lid, skim off some fat, discard bay leaf and cinnamon stick, stir, and serve.
  10. Garnish as desired with cabbage, radish, sour cream, avocado, green onion, cilantro, Cotija cheese, or tortillas.
