Instructions
- Dice the onion and sauté it in a large soup pot with cooking oil until tender.
- Add flour and chili powder to the pot and sauté for an additional two minutes.
- Whisk in water, tomato paste, cumin, garlic powder, cayenne pepper, and salt until the tomato paste is dissolved.
- Bring the mixture to a simmer to thicken.
- Add chicken broth, shredded meat, diced chiles, and drained hominy to the pot and heat through for about 10 minutes.
- Cut lime into wedges and chop cilantro for topping.
- Serve each bowl topped with cilantro and a lime wedge.
