Zucchini Pizza Crust

Ingredients

  • 8 oz Zucchini
  • 3 large Eggs
  • 1 cup Mozzarella cheese
  • ¼ cup Coconut flour
  • ½ tsp Sea salt

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a pizza pan.
  2. Spread the grated zucchini on the pan and sprinkle lightly with sea salt, then bake for 10-15 minutes until semi-soft.
  3. In a bowl, combine eggs, mozzarella, coconut flour, and sea salt.
  4. Pat the baked zucchini dry with paper towels and mix it into the bowl with the other ingredients.
  5. Grease the pizza pan again and spread the zucchini mixture into a thin circle.
  6. Bake for 20-30 minutes until there are brown spots on top.
  7. Let the crust rest for 10 minutes, then add sauce and toppings.
  8. Return to the oven at 400°F (204°C) for about 10 minutes until the cheese melts.
