Ingredients

The base

  • 2 zucchini zucchini
  • ½ cup pizza sauce
  • ½ cup shredded cheese (or vegan cheese)

The toppings

  • 4 slices pepperoni, cut into quarters
  • to taste parmesan cheese, for garnish
  • to taste fresh basil, for garnish

Seasoning

  • to taste fine sea salt

Instructions

  1. Preheat the oven to 400ºF.
  2. Slice each zucchini in half lengthwise and scoop out the seeds, leaving about ½-inch of the flesh.
  3. Place the zucchini cut-side up on a baking sheet and sprinkle with salt.
  4. Bake the zucchini for about 20 minutes until tender.
  5. Fill the cooked zucchini with pizza sauce, shredded cheese, and toppings like pepperoni and veggies.
  6. Return to the oven and bake for another 10 minutes until the cheese is bubbly.
  7. Serve immediately, garnished with fresh basil and parmesan cheese if desired.
