Instructions
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Slice the zucchini lengthwise and scoop out some of the centers to create wells.
- Place the zucchini cut side up on the baking sheet, drizzle with olive oil, and sprinkle with sea salt and black pepper.
- Roast the zucchini in the oven for about 15-20 minutes until soft.
- After roasting, pat any moisture from the wells with paper towels.
- Spread 2 tablespoons of marinara sauce inside each zucchini boat, then top with mozzarella cheese and mini pepperoni slices.
- Bake for an additional 5 minutes, then broil for 3-5 minutes until the cheese is melted and browned.
