Ingredients

  • 1 lb ground italian sausage (no added sugar)
  • 4 pieces zucchini, sliced in half lengthwise with flesh scooped out
  • ½ piece bell pepper, diced
  • ¼ cup mushrooms, sliced
  • ¼ cup olives, sliced
  • ½ cup marinara sauce (no added sugar)
  • ¼ cup cheese, shredded (optional, keto only)
  • ¼ cup pepperoni, chopped (optional)
  • to taste none chopped parsley or basil (optional topping)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a medium skillet over medium heat, cook the Italian sausage, breaking it up with a spatula until fully cooked.
  3. While the sausage is cooking, prepare the rest of the ingredients.
  4. Place the prepped zucchini halves on the baking sheet and spoon marinara sauce into each boat.
  5. Once the sausage is cooked, scoop it into each boat over the sauce.
  6. Layer on the remaining toppings as desired.
  7. Transfer to the oven and bake for 15 minutes, or until heated through and cheese is melted if used.
  8. Remove from the oven and serve.
