Zucchini Pizza Boats

zucchini, sliced in half lengthwise with flesh scooped out

marinara sauce (no added sugar)

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a medium skillet over medium heat, cook the Italian sausage, breaking it up with a spatula until fully cooked.
- While the sausage is cooking, prepare the rest of the ingredients.
- Place the prepped zucchini halves on the baking sheet and spoon marinara sauce into each boat.
- Once the sausage is cooked, scoop it into each boat over the sauce.
- Layer on the remaining toppings as desired.
- Transfer to the oven and bake for 15 minutes, or until heated through and cheese is melted if used.
- Remove from the oven and serve.
