Stuffed Zucchini Boats

Instructions
- Preheat the oven to 400°F and coat a baking dish with cooking spray.
- Cut the zucchini in half lengthwise and scoop out the flesh.
- Season the zucchini shells with Italian seasoning, salt, and pepper.
- Heat olive oil in a pan over medium-high heat, add sausage, and cook for 4-5 minutes while breaking it up.
- Add onion to the pan and cook for an additional 4 minutes until softened, then add garlic and cook for 30 seconds.
- Season the mixture with salt and pepper, then add marinara sauce and simmer for 5 minutes.
- Spoon the meat mixture into the zucchini shells and top with shredded cheese.
- Bake for 25 minutes until the zucchini is tender and cheese is melted and golden brown.
- Sprinkle with parsley before serving.
