Ingredients

The zucchini

  • 4 medium zucchini

The filling

  • ½ lb ground Italian sausage
  • ½ lb ground meat of choice
  • ½ small onion
  • 3 cloves garlic
  • 1 14 oz can canned diced tomatoes
  • 2 handfuls fresh spinach
  • ½ teaspoon dried Italian seasoning
  • ½ teaspoon fine salt
  • teaspoon black pepper
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup fresh basil (optional)

Instructions

  1. Preheat the oven to 375°F and prepare the zucchini by washing and halving them lengthwise, scooping out the insides.
  2. Chop the scooped-out zucchini flesh and set aside.
  3. Place the zucchini halves on a baking sheet, mist with cooking spray, and bake for 6 minutes.
  4. In a skillet, cook the ground sausage, ground meat, reserved zucchini flesh, onion, and garlic until the meat is cooked through.
  5. Add the drained tomatoes, spinach, Italian seasoning, salt, and pepper to the skillet and cook until the spinach wilts.
  6. Stir in 1 cup of mozzarella cheese into the filling mixture.
  7. Stuff the zucchini halves with the filling and sprinkle the remaining cheese on top.
  8. Bake for 12-15 minutes until the zucchini is tender and the cheese is melted.
  9. Garnish with fresh basil if desired before serving.
