Instructions
- Preheat the oven to 375°F and prepare the zucchini by washing and halving them lengthwise, scooping out the insides.
- Chop the scooped-out zucchini flesh and set aside.
- Place the zucchini halves on a baking sheet, mist with cooking spray, and bake for 6 minutes.
- In a skillet, cook the ground sausage, ground meat, reserved zucchini flesh, onion, and garlic until the meat is cooked through.
- Add the drained tomatoes, spinach, Italian seasoning, salt, and pepper to the skillet and cook until the spinach wilts.
- Stir in 1 cup of mozzarella cheese into the filling mixture.
- Stuff the zucchini halves with the filling and sprinkle the remaining cheese on top.
- Bake for 12-15 minutes until the zucchini is tender and the cheese is melted.
- Garnish with fresh basil if desired before serving.
