Ingredients

The zucchini and filling

  • 4 pieces zucchini, halved and scooped out
  • 1 lb ground turkey
  • 1 package chopped frozen spinach, de-thawed
  • 1 egg egg
  • 1 clove garlic, minced
  • 1 red pepper diced red pepper
  • 1 small onion diced onion
  • 2 tablespoons shredded mozzarella

The seasoning and sauce

  • 2 ½ teaspoons basil
  • 2 teaspoons oregano
  • 1 ½ teaspoons parsley
  • 1 teaspoon salt
  • ½ teaspoon cracked pepper
  • 2 15 oz cans fire roasted tomatoes

Instructions

  1. Preheat the oven to 375ºF.
  2. Cut off the ends of the zucchini and halve them, scooping out the seeds while leaving about a ¼ inch of flesh.
  3. In a large bowl, combine ground turkey, egg, diced red pepper, diced onion, minced garlic, basil, oregano, parsley, salt, and cracked pepper.
  4. De-thaw the spinach, squeeze out excess liquid, and add it to the meat mixture.
  5. Mix all ingredients until just combined, being careful not to over mix.
  6. Stuff each zucchini half with the meat mixture and place them in a 9x13 inch baking dish.
  7. Cover the stuffed zucchini with the fire roasted tomatoes.
  8. Bake in the oven for 45-50 minutes, or until the meat is cooked through.
  9. Sprinkle shredded mozzarella on top and return to the oven for an additional 5 minutes.
  10. Remove from the oven and let sit for 5 minutes before serving.
