Stuffed Zucchini Boats

Instructions
- Preheat the oven to 375ºF.
- Cut off the ends of the zucchini and halve them, scooping out the seeds while leaving about a ¼ inch of flesh.
- In a large bowl, combine ground turkey, egg, diced red pepper, diced onion, minced garlic, basil, oregano, parsley, salt, and cracked pepper.
- De-thaw the spinach, squeeze out excess liquid, and add it to the meat mixture.
- Mix all ingredients until just combined, being careful not to over mix.
- Stuff each zucchini half with the meat mixture and place them in a 9x13 inch baking dish.
- Cover the stuffed zucchini with the fire roasted tomatoes.
- Bake in the oven for 45-50 minutes, or until the meat is cooked through.
- Sprinkle shredded mozzarella on top and return to the oven for an additional 5 minutes.
- Remove from the oven and let sit for 5 minutes before serving.
