Turkey Stuffed Zucchini Boats

Ingredients

  • 4 medium zucchini
  • 2 tsp extra virgin olive oil
  • 1 lb ground turkey
  • 3 cloves garlic
  • ½ cup onion
  • ½ cup green pepper
  • ½ cup reserved zucchini meat
  • 1 tbsp Italian seasoning
  • 1 cup strained tomatoes
  • ½ cup part skim mozzarella cheese

Instructions

  1. 1. Boil a large pot of water and preheat the oven to 350°F (175°C).
  2. 2. Slice the zucchini in half lengthwise and scoop out the center, leaving a ¼ inch shell.
  3. 3. Boil the zucchini halves in the water for one minute.
  4. 4. Heat olive oil in a skillet over medium-high heat, then add ground turkey and cook until browned.
  5. 5. Add garlic, onion, green pepper, zucchini meat, Italian seasoning, strained tomatoes, salt, and pepper to the skillet. Simmer for about 15 minutes.
  6. 6. Place the zucchini halves in a baking dish and fill each with about ½ cup of the turkey mixture.
  7. 7. Top each filled zucchini with 1 tbsp of shredded mozzarella cheese.
  8. 8. Cover with aluminum foil and bake for 30 minutes until the cheese melts and everything is heated through.
