Turkey Stuffed Zucchini Boats

Instructions
- 1. Boil a large pot of water and preheat the oven to 350°F (175°C).
- 2. Slice the zucchini in half lengthwise and scoop out the center, leaving a ¼ inch shell.
- 3. Boil the zucchini halves in the water for one minute.
- 4. Heat olive oil in a skillet over medium-high heat, then add ground turkey and cook until browned.
- 5. Add garlic, onion, green pepper, zucchini meat, Italian seasoning, strained tomatoes, salt, and pepper to the skillet. Simmer for about 15 minutes.
- 6. Place the zucchini halves in a baking dish and fill each with about ½ cup of the turkey mixture.
- 7. Top each filled zucchini with 1 tbsp of shredded mozzarella cheese.
- 8. Cover with aluminum foil and bake for 30 minutes until the cheese melts and everything is heated through.
