Cheesy Stuffed Zucchini Boats

Ingredients

The zucchini and filling

  • 3 large zucchini
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ large onion, finely chopped
  • 1 cup marinara sauce
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper

The topping

  • cups shredded cheese
  • to taste cilantro or parsley, to serve

Instructions

  1. Preheat the oven to 180C/350F and prepare a baking sheet.
  2. Cut the zucchinis in half lengthwise and scoop out the insides, setting them aside.
  3. Heat olive oil in a pan and sauté garlic and onion until fragrant.
  4. Add ground turkey to the pan and cook until no longer pink.
  5. Stir in marinara sauce, Italian seasoning, and chopped zucchini insides, then simmer for 8-10 minutes.
  6. Stuff the zucchini halves with the filling and top with shredded cheese.
  7. Bake for 15-20 minutes until the cheese is melted and golden.
