Braised Chicken with Carrot and Mushroom

Ingredients

The chicken

  • 2 pieces chicken leg quarters
  • to taste salt
  • to taste black pepper
  • 1 tablespoon oil

The vegetables

  • 6 pieces shallots, or ½ small onion, peeled
  • 4 pieces carrots, peeled
  • 6 pieces fresh Shiitake mushrooms
  • 8 pieces cherry tomatoes, or grape tomatoes
  • to taste chopped parsley leaves

The broth

  • 1 cup low-sodium chicken broth

Instructions

  1. 1. Season the chicken with salt and black pepper.
  2. 2. Heat oil in a frying pan over medium heat and add the chicken.
  3. 3. Cover the pan as the chicken sears for about 5 minutes until browned.
  4. 4. Turn the chicken to brown the other side until golden.
  5. 5. Remove the chicken and sauté shallots, carrots, and mushrooms in the same pan for about 1 minute.
  6. 6. Add the chicken back to the pan and pour in the chicken broth.
  7. 7. Cover and reduce heat, simmering for about 45 minutes, turning the chicken occasionally.
  8. 8. Add cherry tomatoes in the last 5 minutes of cooking.
  9. 9. Season with salt, garnish with parsley, and serve immediately.
