Braised Chicken with Carrot and Mushroom

The broth

low-sodium chicken broth
Instructions
- 1. Season the chicken with salt and black pepper.
- 2. Heat oil in a frying pan over medium heat and add the chicken.
- 3. Cover the pan as the chicken sears for about 5 minutes until browned.
- 4. Turn the chicken to brown the other side until golden.
- 5. Remove the chicken and sauté shallots, carrots, and mushrooms in the same pan for about 1 minute.
- 6. Add the chicken back to the pan and pour in the chicken broth.
- 7. Cover and reduce heat, simmering for about 45 minutes, turning the chicken occasionally.
- 8. Add cherry tomatoes in the last 5 minutes of cooking.
- 9. Season with salt, garnish with parsley, and serve immediately.
