Instructions
- Mix the white sushi rice and whole grain rice blend in a bowl and set aside.
- Prepare the tofu by whisking together soy sauce, sesame-chili oil, and water, then marinate the tofu slabs in the mixture.
- Cook the tofu in the marinade until golden, then slice into matchsticks.
- Prepare a sushi mat or parchment paper and place a sheet of nori on it.
- Spread about 1 cup of the rice mixture across the bottom third of the nori and add strips of tofu, avocado, sweet potato fries, and kale.
- Roll the sushi tightly using the mat or parchment paper, compressing as you go.
- Cut the rolls into pieces using a damp knife.
- Serve with soy sauce mixed with wasabi paste.
