Ingredients

Sushi Base

  • 4 sheets Nori
  • 4 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sea salt

Cooked Fillings

  • 1 cup Shitake mushrooms
  • 1 tablespoon Tamari
  • 1 cup sweet potato, cut into matchsticks

Raw Fillings

  • 6 slices avocado
  • 6 slices cucumber, matchstick style
  • 6 slices carrot, matchstick style
  • 6 slices green onion, matchstick style

Serving Suggestions

  • to taste Tamari
  • to taste wasabi
  • to taste fresh pickled ginger
  • to taste Creamy Peanut Sauce

Instructions

  1. Mix rice vinegar, sugar, and salt in a bowl and heat until sugar dissolves, then add to cooked rice and mix well.
  2. Marinate the sweet potato and mushrooms in tamari while preparing other ingredients.
  3. Bake the marinated sweet potato and mushrooms at 400°F for 20-25 minutes until crisp.
  4. Spread 1 cup of rice onto a nori sheet and lay filling ingredients in a thin line at one end.
  5. Tightly roll the nori sheet and cut into pieces. Serve with dipping sauces.
