Lemon Broccoli Pasta Salad

Ingredients

The salad

  • 2 cups Broccoli Florets
  • ¾ lb. Penne Pasta
  • ¼ cup Parmesan Cheese

The dressing

  • ½ cup Olive Oil
  • ¼ cup Lemon Juice
  • 1 unit Lemon Zest
  • ½ tsp. Garlic Powder
  • ½ tsp. Onion Powder
  • ½ tsp. Dried Oregano
  • to taste Salt
  • to taste Pepper

Instructions

  1. Cook the pasta according to package instructions.
  2. While the pasta is cooking, prepare the broccoli and make the dressing.
  3. In the last minute of cooking the pasta, add the broccoli to blanch it.
  4. Once cooked, strain the pasta and broccoli, then rinse with cold water to stop the cooking process.
  5. Drain well and toss with half of the dressing.
  6. Taste and adjust seasoning with salt and pepper.
  7. Reserve some dressing for later to add to leftovers.
  8. Garnish with Parmesan before serving.
