Instructions
- Cook the pasta according to package instructions.
- While the pasta is cooking, prepare the broccoli and make the dressing.
- In the last minute of cooking the pasta, add the broccoli to blanch it.
- Once cooked, strain the pasta and broccoli, then rinse with cold water to stop the cooking process.
- Drain well and toss with half of the dressing.
- Taste and adjust seasoning with salt and pepper.
- Reserve some dressing for later to add to leftovers.
- Garnish with Parmesan before serving.
