Instructions
- Cook the pasta according to package directions until al dente, then drain and set aside.
- In a large skillet, add ¼ cup of water and the broccoli. Cover and steam over medium-high heat for 1 to 2 minutes until starting to soften, then remove the lid and cook for another minute to evaporate most of the water.
- Add olive oil, sun-dried tomatoes, lemon juice, lemon zest, and maple syrup to the skillet. Stir and cook for another minute.
- Mix in the cooked pasta, stir, and heat over medium-low for 30 seconds to combine flavors.
- Stir in pine nuts and grated Parmesan. Season with salt and add more lemon juice if desired.
