Roasted Broccoli Pasta with Lemon and Feta

Ingredients

The pasta and vegetables

  • 1 lb broccoli crowns
  • 8 oz whole wheat penne pasta

The seasoning and flavorings

  • 1 Tbsp olive oil
  • 1 tsp steak seasoning
  • 1 fresh lemon
  • 2 Tbsp butter
  • 1 oz crumbled feta

Instructions

  1. Preheat the oven to 400ºF.
  2. Cut the broccoli into small florets and spread them on a lined baking sheet.
  3. Drizzle the broccoli with olive oil and sprinkle with steak seasoning, then toss to coat.
  4. Roast the broccoli for 20-25 minutes until browned and crispy.
  5. While the broccoli roasts, boil water and cook the penne pasta for 8-10 minutes until tender.
  6. Reserve about ½ cup of pasta water, then drain the pasta.
  7. Zest the lemon and cut it into wedges.
  8. Return the drained pasta to the pot and mix in the roasted broccoli, butter, lemon zest, and juice from two lemon wedges.
  9. Stir until the butter melts, adding reserved pasta water if needed.
  10. Top with crumbled feta and serve with extra lemon wedges.
