Ingredients

The cake

  • cups almond flour
  • 1 tsp baking soda
  • 2 tbsp pumpkin pie spice
  • ¼ tsp salt
  • 3 large eggs
  • ½ cup pumpkin puree
  • ¼ cup melted coconut oil
  • ½ cup maple syrup
  • 1 tsp vanilla
  • ¾ cup mini chocolate chips

The frosting

  • 2 tbsp unsalted butter
  • 1 package cream cheese
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 tsp salt

Instructions

  1. Preheat the oven to 350°F and grease an 8×8 baking dish.
  2. In a medium bowl, mix together almond flour, baking soda, pumpkin pie spice, and salt.
  3. In a large bowl, whisk together eggs, pumpkin puree, coconut oil, maple syrup, and vanilla.
  4. Add the wet ingredients to the dry ingredients and mix until combined.
  5. Stir in the mini chocolate chips, then pour the batter into the baking dish.
  6. Bake for 35-40 minutes or until a toothpick inserted comes out clean. Let cool.
  7. While the cake is baking, beat together the frosting ingredients until smooth.
  8. Once the cake has cooled completely, frost it with the cream cheese frosting.
